  1. In a big bowl take maida, baking powder, baking soda in a bowl, and mix well.
  2. Take other bowl put milkmaid, butter, sugar, essence and mix well.

  4. Add dry ingredients slowly mix very slowly and then only for 30-sec use beater.
  5. Beat well with a whisk until creamy and thick. Preheat oven to 180℃ for 10 minutes.

  7. Bake in preheated oven at 180℃ for 30 to 35 mins. Or till a fork inserted into the center of the cake comes out clean.
  8. Allow the cake to cool down for 15 minutes then invert and remove the butter paper.

  10. For icing:- Cut cake into three parts. Place one layer on a serving plate, spread sugar syrup on it.

  14. Divide the glaze evenly between 4-5 bowls. Add colour gel in different shades using gel food colouring.

  16. Pour them back into one large bowl alternating colors and drizzling the colors together as you combine them.

The key to pouring it over buttercream is that the cake is thoroughly chilled, and that the frosting is super smooth. Separate the glaze into different containers and color them to your desire. We used red and white for this cake. Blend the coloring with the glaze until the color is distributed evenly, then cover each container with the cling film, pressing the film into the glaze to ensure that there is no skin when you are ready to use the glaze.
