  5. preheat oven to 200c gas mark 6
  6. cut the pastry in half and roll out 1 portion on a lightly floured surface and use to line a round pie tin or plate approx. 23cm dia.
  7. spoon the cooled haggis mixture into the centre
  8. roll out the remaining pastry and use to top the pie, moistening the edges to ensure a complete seal
  9. use pastry trimmings to decorate pie
  10. brush with egg or milk to glaze and bake in the oven for approx. 35mins until golden
  11. delicious served with mashed potatoes and swede - neeps n tatties or other mashed vegetables such as carrot or celeriac

This hearty and delicious pie would be perfect for Burns night or any winter night! Making your own shortcrust pastry is easy but you can also use store-bought pastry and cut your workload considerably. I use a large old oven tray for this and keep the pie shallow. It cooks quicker and is great (fabulous in fact) sliced into cold slabs for a picnic or a hiker's lunch. Cook your haggis according to pack instructions.
