  15. Take 1 tablespoon kasuri methi leaves/dry fenugreek leaves
  16. Make ready Juice of 1 small lemon
Instructions to make Chicken Bhuna Masala:
  1. Heat a non stick pan
  2. Add the dry red chillies, pepper corns,cumin seeds, coriander and fennel seeds
  3. Dry roast until brown and aromat
  4. Take off heat and let cool for few minutes before you grind them all into a fine powder
  5. Heat 2 tablespoon oil and add green chillies and chopped onion
  6. Sauté till onions are translucent
  7. Add the ginger-garlic paste and tomato next
  8. Sauté for a few minutes and blend into a smooth purée without adding water
  9. Heat the remaining oil and add the Bay leaf and the blended purée
  10. Add ground spices and salt to taste
  11. Sauté for 2-3 minutes
  12. Cook covered until the gravy separates from the oil
  13. Add the chicken pieces now and coat well with the gravy
  14. Roast well on medium-Low heat till the chicken pieces are golden brown (turn the pieces in the process)
  15. Add hot water and bring to a boil
  16. Reduce heat and cook covered until the chicken is cooked
  17. Once done/the desired consistency of the gravy has reached, add the kasuri methi, lemon juice and garam masala powder
  18. Mix well and cook for a few minutes before taking off heat
  19. Transfer into a serving bowl
  20. Chicken Bhuna is ready to be relished (with any flat breads-best accompaniment)
