  5. Add fresh chopped cilantro and water. Let simmer for 45 mins. If sauce gets dry add a little more water.

In a Dutch oven over medium heat, brown the chicken in shortening. Add curry powder, salt and pepper; mix well. Traditional Jamaican chicken curry is a bold, flavorful dish that's cooked slowly over low heat, allowing time for the spices to develop. Sauté a pile of chopped onions in a little oil, then stir in curry powder (or red curry paste for Thai flavors). Pour in a can of coconut milk and swirl to combine.
