Add lentils, potatoes to ribs in the pot. - Let boil the liquid, lower the flame and cook slowly for 25 to 30 minutes or until lentils are soft.
- Serve the soup with a bit chopped tomatoes and cilantro on top.
Melt the butter in a small skillet over medium heat. Stir in the cayenne, oregano, pepper, thyme, mustard, and garlic. Use a paring knife to make several small incisions in the fat side of the meat. Combine both stocks and lentils in large pot over high heat. Meanwhile, heat medium skillet over medium heat.
