What is Palitaw Traditional Palitaw is made from glutinous rice grains which are soaked in water overnight and then processed into a soft dough via grinding. The dough is formed into thin patties, cooked in boiling water, and then coated with grated coconut, toasted sesame seeds, and sugar. Palitaw is a term used to call a sweet flat rice cake that is eaten in the Philippines as a snack or dessert. Originally, grounded or pounded sticky rice is used to make this rice cake (called kakanin in the local language) - however, the practice of using packaged rice flour became common because it is more efficient.

The ingredients needed to make Palitaw:
  1. Make ready 2 cups Glutinous rice flour
  2. Get 100-150 g grated coconut
  3. Make ready 1 cup water
  4. Make ready 1 pot of boiling water
  5. Prepare 2 tablespoons Toasted peanut (preferably no skin) or toasted sesame seeds
  6. Get 2-3 tablespoons sugar (depends on preference of sweetness)

Palitaw is actually glutinous rice flour and water mixed into a dough, rolled into balls, boiled until they're soft and kind of chewy, and rolled in coconut and sugar. And if you're having a party, you decorate them with colored sugar or food coloring and put 'em on a stick, because food on a stick = party. Take a portion of the soft dough and roll it into a ball between the palms of your hands. Pull lengthwise and shape into a tongue.

Steps to make Palitaw:
  1. Mix the glutinous rice flour and water in a bowl into a dough
  2. Roll into small balls and flatten using your thumb
  3. Put them in a pot with boiling water. Once it floats, remove it from the water and then cover it with the grated coconut. Reserve some grated coconut for the topping.
  4. For it's topping, grind the toasted peanut in mortar and pestle. If you have peanuts with skin it is easy to peel the skin after toasting. No need to grind if you are using sesame seeds. If using sesame seeds, you can lightly toast it first in a pan to add toast-like flavor. Mix the peanuts/sesame seeds with sugar and any remaining grated coconut in a bowl.
  5. To top it with the sugar-peanut mixture (step 4) then serve

Take a portion of the soft dough and roll it into a ball between the palms of your hands. Pull lengthwise and shape into a tongue. The cake is ready when it floats. This easy-to-make Filipino delicacy is made out of glutinous rice flour dough and shaped into a flat oblong. You'll be amazed by how it floats when cooked in boiling water.
