  3. Prepare 1 cup moong dal soaked

  6. Get 1 tsp grated ginger
  7. Prepare A pinch salt
  8. Get 1 tsp cardamom powder
  9. Take 1 cup soaked urad daal
  10. Prepare 1 tsp Chopped green chillies
  11. Make ready as needed Some chopped coriander leaves
  12. Prepare 1 tsp Cumin seeds

Manda Pitha is a traditional delicacy prepared in Odia homes especially on the occasion of festivals. It finds prominence in the Manabasa Gurubar Puja held in the holy month of Margashir. The traditional variety uses steamed rice flour for outer covering and coconut and jaggery for the stuffing. Manda pitha (Odia: ମଣ୍ଡା ପିଠା) is a steamed pitha which is prepared in Odisha, India during festivals falling on monsoon and post-monsoon seasons like Manabasa Gurubara, Durga Puja.

Instructions to make Rice flour Dumplings/ Odia manda pitha:
  1. For preparing rice dough: Boil water in a deep bottom pan.Add little salt.Add rice flour to it.Do ensure that you are adding rice flour little by little to avoid lumps.Stir continuously.
  2. Keep stirring in a low to medium flame until water gets absorbed to the rice flour.Let it cool for some times.
  3. Preparation of 1st stuffing: Blend soaked moong daal to a rough paste.
  4. Steam the moong daal in a cloth for 10-15 minutes.Add sugar,grated ginger and coconut and cardamom powder to it and mix them well.
  5. For preparing second stuffing: Blend soaked urad daal in a mixture.Allow it to rest for 3-4 hours.
  6. After four hours mix the paste well. And add chopped green chilies,coriander leaves,cumin seeds and sat to it.Mix them well.Second stuffing is ready.
  7. Grease your hand with some oil and Knead the rice dough well in a workable texture.
  8. Moist your hand with some water.Make even size small balls of the dough using oil. With help of the palm make a big hole out of the ball.Take a hand full of first mixture and stuff it and now gather the ends of the hole and close it to make a round shaped ball.Make some dough balls like this.
  9. With the second stuffing we are going to give it a open triangular shape.Prepare dough ball like previous one.Put the urad daal stuffing in between and just give it three corners and seal the corners while middle portion should be opened. Make some dumplings like this.
  10. Prepare a steamer by adding water, a teaspoon of oil and grease it.
  11. While the water is simmering, place the pithas on a greased steamer plate and steam for 6 to7 minutes.
  12. Once the pithas are cooked they will turn translucent.Serve hot.
