The ingredients needed to make Miso Eggplant:
  1. Take 1 big eggplant
  2. Make ready 1 tsp miso
  3. Prepare Vinegar
  4. Take Sesame oil

The translation literally means eggplant grilled over a fire, which is exactly how it's done in Japan. In a bowl mix together miso, sugar, sake, mirin, sake and egg yolk. Sprinkle with salt and leave ½ hour. Rinse, pat dry then brush with a little veg oil on both sides.

Steps to make Miso Eggplant:
  1. Wash eggplant and cut diagonally. Brush each side with sesame oil.
  2. Pre heat oven at 250°C and bake it for 10 mins each side.
  3. After that remove from oven and brush it with miso mixture each side then put it back again in the oven for 5 mins each side again.
  4. When done sprinkle with sesame seed and spring onion.

Sprinkle with salt and leave ½ hour. Rinse, pat dry then brush with a little veg oil on both sides. The miso glaze is applied liberally to the eggplant after the roasting process is finished.
