  2. Prepare 2 cup water
  3. Take 1 1/2 cup coco milk
  4. Take 1 1/4 cup brown sugar
  5. Get 1/8 tsp lemon grind
  6. Make ready 1/2 cup coco milk for latik

Biko is a Filipino rice cake made from sticky rice (locally known as malagkit), coconut milk, and brown sugar. Like other rice cakes, this is referred to as kakanin (derived from the word "kanin" which means rice) and is often eaten as dessert or meryenda (mid-afternoon snack). Biko (pronounced bee-koh), a rice cake, is a native Filipino delicacy or 'kakanin' where glutinous rice is cooked with coconut milk and brown sugar then topped Latik. Instructions to make Biko:
  1. Soaked rice for few hours. Cook rice with 2 cups of water for about 15 - 20 minutes.
  2. In separate caserole, let 1/2 cup coco milk to boil to make latik.
  3. Combine rice, cocomilk, sugar, lemon grind. Cook until rice is fully cooked.
  4. Place in prepared tray. Let it cool. Put aome latik on top and serve.
