  1. Take 1 cup besan/gram flour
  2. Prepare to taste Salt
  3. Get 1/2 tsp Red chilli powder
  4. Get 1 tsp Oil

  6. Prepare 1/2 tsp Cumin seeds
  7. Prepare For gravy
  8. Prepare 2 Onions

  10. Take 2 tsp Ginger garlic paste

  12. Prepare 1/2 tsp red chilli powder
  13. Prepare 1 tsp Coriander powder
  14. Get 1 tsp Garam masala
  15. Make ready 1/2 tsp Turmeric powder
  16. Get 1 tsp crushed kasuri methi (dried fenugreek leaves)
  17. Get 4 Tsp Curd

Gatte ki sabji is a popular gravy based dish from the Rajasthani cuisine. Gatta or gatte (plural) are gram flour (besan) roundels which are added to a curd based gravy. There are many variations of making Rajasthani gatte ki sabzi. At home we make a Punjabi version of gatte ki sabzji with an onion-tomato gravy where curd is not added.

Instructions to make Steamed Gatta Sabzi:
  1. Take a bowl and add besan, salt red chilli powder, cumin seeds and oil and mix well, add a little water and knead a tight dough.
  2. Now take some dough and make thin long strips one by one
  3. Now in a vessel add water and bring it to boil, add little oil, add the dough strips and steam for 15 minutes.
  4. Switch off the gas and let it cool. Take out the steamed strips and cut into round pieces. Keep aside.
  5. Now peel and wash onions and cut length wise, chop tomatoes roughly.
  6. In a pan add oil and heat it, add chopped onions and cook till golden brown, add ginger garlic paste and chopped tomatoes, add above-mentioned spices and mix well and cook till tomatoes are tender, add water and further cook for 5 minutes
  7. Now let the mixture cool and blend it with blender,
  8. Again in a pan add little oil and put the puréed paste and cook till the mixture leaves the sides of pan,
  9. Add the steamed gattas and cook for 1-2 mints, add water as required for the gravy, further cook till the gravy thickens.
  10. Add crushed kasuri methi and serve hot with rice or chapati.

There are many variations of making Rajasthani gatte ki sabzi. At home we make a Punjabi version of gatte ki sabzji with an onion-tomato gravy where curd is not added. Gatta Sabzi refers to the curry prepared with steamed gram flour dumplings called 'Gatte' in Hindi. From the ancient time, Rajasthani cuisine is influenced mostly by two factors, lifestyle of Rajputana Royalty and second availability of ingredients in this arid region. Also known as besan gatta sabzi, this tastes absolutely amazing with steamed rice or Bajra roti (millet flatbread).
