  1. Wash Bhindi properly, dry it with a cloth & cut into medium-small size pieces.
  2. Chop onion very finely, grind tomatoes, green chillies & ginger garlic paste into fine purée in a mixer grinder.
  3. Stir Dahi properly so that it doesn’t get burned while cooking.
  4. Now take a Iron Kadhai, add 1/2 big spoon Mustard oil in it & keep the gas on high flame to burn the oil high flame.
  5. When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit.
  6. After some time, again turn on the gas & keep it on medium flame.
  7. Then add finely chopped onion in it & roast it for 1-2 minutes but don’t roast them till golden brown because they will get roasted with bhindi also.
  8. After 1-2 minutes, add chopped bhindi pieces in it & roast them with onions for 2-3 minutes.
  9. After 2-3 minutes, add 1 teaspoon Salt, 1/2 teaspoon Haldi Powder & mix them properly.
  10. Now cook bhindi for 10-12 minutes till it becomes soft.
  11. After 10-12 when bhindi becomes soft, take them out in bowl.
  12. Add 2-3 Tablespoons Mustard Oil more in kadhai, add 1/2 Teaspoon Ajwain, 1 Teaspoon Jeera & let them sizzle.
  13. When they start sizzling, add finely grinded tomato purée in t with 1 Teaspoon Salt so that they start releasing oil quickly.
  14. After 5-6 when purée starts releasing oil, add spices mix in it & roast them for 2-3 minutes.
  15. After 2-3 minutes, turn the gas on low flame & add 4 Table Spoon Dahi in it & start stirring it immediately so that it doesn’t get burned.
  16. After 2 minutes, add cooked bhindi & onion in it & mix them properly.
  17. Then add 1 teaspoon garam Masala, 1 teaspoon kasuri Methi & Dhaniya leaves in it & mix them properly.
  18. Your Bhindi Sabzi Masala is ready to be served.
