  1. For puri : take wheat flour add ajwain, salt and oil in a bowl and mix them all. Add water and knead tight dough. divide the dough into half and roll the dough evenly into circles using rolling pin. roll neither too thin nor thick. further heat oil in a deep frying pan or kadai. when the oil is sufficiently hot, drop rolled out poori. press gently with the spoon to puff up.
  2. Once they puff, it will automatically turn over. if not, once the bottom side is golden brown, turn over the poori.and fry the puri till golden brown.
  3. For chole: soak chole overnight. in morning boil chole in pressure cooker for 1/2hour at low flame. take oil in a pan add ginger, garlic paste and saute it.add chopped onion and saute it, add chopped tomato and green chilli and saute it. now add salt, red chilli powder, turmeric, garam masala and chana masala. cook for 2 minutes and add boiled chole into it.
  4. Serve hot puri with chana and salad.
