  1. Prepare 500 gms Chickpea
  2. Take 1 cup Clarified butter / ghee
  3. Take 2-3 Whole red chilli
  4. Get 1 tsp Whole coriander seeds
  5. Get 1 tsp Cumin seeds / jeera seeds
  6. Take 2 medium Chopped onion
  7. Get 1 tsp Ginger garlic paste
  8. Take 3-4 Black pepper
  9. Prepare 1" Cinnamon stick
  10. Make ready 1 piece Mace / javitri
  11. Get 3-4 Whole cloves
  12. Get 4 Green cardamom
  13. Take 1/2 tbsp Anardana / pomegranate seeds
  14. Take 1/2 cup Tomato paste
  15. Take 1 tsp Chole masala powder
  16. Make ready 1/2 tsp Turmeric powder
  17. Take to taste Salt -
  18. Take 1 tbsp Chopped coriander leaves
  19. Make ready 1 tbsp Baking powder
  20. Prepare 1 cup All purpose flour
  21. Get to taste Salt
  22. Get 2 tbsp Clarified butter
  23. Make ready as needed Clarified butter - for frying

Chole Puri Recipe is the popular North Indian Breakfast Dish, which can be served as a fulfilled meal in lunch or dinner. Some people enjoy it as a Snack Dish as well. Chole / Chickpea or Garbanzo beans is a versatile legume, and it's seeds are high in protein. I like the combo of Chole and Puri.

Instructions to make Chole puri:
  1. Dry roast whole red chilli,whole coriander seeds,green cardamom,whole cloves,cumin seeds,black pepper,mace and cinnamon and lastly add anardana / pomgranate seeds. - I
  2. In a blender add all dry roasted garam masala to make a fine paste.
  3. Soak chickpea over night and add 1 tbsp of baking powder.
  4. Pressure cook with salt and 2 cup of water for 10 mins.
  5. Drain the chickpea and store the water
  6. Heat clarified butter / ghee in a pan fry the sliced onion till brown.
  7. Add ginger garlic paste,chole masala,turmeric powder and saute for 2 - 3 mins.
  8. Add tomato paste and saute for 2 - 3 mins.
  9. Add anardana /pomegranate seeds,salt and mix well.
  10. Now add poiled chickpea and saute for 3 - 4 mins
  11. Add chickpea water.
  12. Add roasted garam masala and cook simmer for 10 mins.
  13. Garnish with coriander leaves.
  14. Serve chole with puri
  15. For puri
  16. Take a large bowl add all purpose flour,salt and 2 tbsp clarified butter and mix well
  17. Make a crumble texture.
  18. With the help of little water make a stiff dough.
  19. Keep aside for 15 mins.
  20. Divide the dough into balls and roll out luchi.
  21. Heat clarified butter in a pan.
  22. Deep fry the luchi in hot oil until golden and crispy
