  1. Prepare 1 cup kabuli chana (white chick peas), soaked overnight and drained

  9. Take 1 tsp chilli powder
  10. Make ready 1 tsp dried mango powder (amchur)
  11. Take 1/4 tsp turmeric powder (haldi)
  12. Make ready 2 tsp coriander (dhania) powder
  13. Take 1 tsp cumin seeds (jeera) powder
  14. Get salt as per taste
  15. Take For Poori
  16. Get 2 cup wheat flour
  17. Get 2 tbsp semolina
  18. Prepare pinch sugar
  19. Make ready to taste salt
  20. Get As needed water to knead
  21. Prepare oil for deep frying

Its very tasty and loving in our country. This Punjabi chole recipe is a hearty vegan curry made with boiled chickpeas, onions, tomatoes and a medley of spices. It tastes divine with freshly made puri or bhatura (Indian breads), and even plain rice, white or brown. For making bhatura yeast, baking powder or soda water is used whereas chola puri is made without yeast or any raising agent.

Instructions to make Chole Puri:
  1. Combine the kabuli chana, salt, tea bag and enough water in a pressure cooker and pressure cook for 3 whistles. - Allow the steam to escape before opening the lid.
  2. Discard the tea bag and drain the kabuli chana. Keep aside.
  3. Heat the oil in a deep pan and add the cumin seeds
  4. When the seeds crackle, add the onions, ginger and garlic and sauté on a medium flame for 1 to 2 minute or till the onions turn translucent
  5. Add the chole masala, chilli powder, dried mango powder, turmeric powder, coriander powder,cumin seeds powder, salt and 1 cup of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally
  6. Add the kabuli chana, mix well and cook on a medium flame for 5 to 7 minutes, while stirring occasionally.
  7. Mash the kabuli chana once lightly with a help of a masher. Serve hot.
  8. Puri :-In a wide mixing bowl, take wheat flour, salt, pinch of sugar and rava. combine well,add water little by little and make a tight, smooth and stiff dough. knead minimum for 5 minutes
  9. Initially, dough will be little hard. knead well in between your palms for few minutes to make it smooth and soft. - add a tsp of oil and knead well.
  10. Make small lemon sized balls between your palms.
  11. Apply oil to dough ball, roll the dough evenly into circles using rolling pin. roll neither too thin nor thick puri
  12. Heat oil in a deep frying pan or kadai. when the oil is sufficiently hot, add one puri and press with the spoon to puff up

It tastes divine with freshly made puri or bhatura (Indian breads), and even plain rice, white or brown.
