Its very tasty and loving in our country. This Punjabi chole recipe is a hearty vegan curry made with boiled chickpeas, onions, tomatoes and a medley of spices. It tastes divine with freshly made puri or bhatura (Indian breads), and even plain rice, white or brown. Instructions to make Chole puri:
  1. Soak the chickpeas in water for 8-10 hours. Then drain the water and add it to a pressure cooker and add 4 cups water and some salt to it.
  2. After 5 to 6 whistles on medium flame, putt off the flame.
  3. Mash the chickpeas slightly with your hands.
  4. Heat oil in a pan and 1 onion to it.
  5. Now take a jar and add remaining onions, garlic, ginger, garam masala(exept cumin seeds and bay leaves) and fried onions to it and grind..
  6. Now add cumin seeds and bay leaves to the oil and when they starts crackling add that paste to it..
  7. Now add salt red chilli powder, coriander powder, turmeric powder and garam masala powder to it and mix well..
  8. Keep stirring it and fry it for 2-3 minutes till the oil starts separating..
  9. Now add the chickpeas to it and mix well
  10. Cook it for more 5 minutes then add curd and water(if needed)..
  11. Cover the pan and cook for 10-12 minutes on a very low flame..
  12. When the gravy thickens put off the flame and take it out in a serving bowl and garnish it with some ginger and green chillies…
  13. For puri, add flour, carom seeds, salt and oil in a mixing bowl..
  14. Knead a soft dough of it and keep it covered for 5 mins to rest..
  15. Now make small balls of it and roll them evenly from the centre.. (Puri should not be too thick or thin)
  16. Now heat oil in a kadhai on a medium high flame.
  17. Now slide the puri carefully to the hot oil and fry..
  18. Take it out and place it on a tissue paper..
  19. Make all your puris like this..
  20. Now serve your chole puri with achaar
