Ugali is made from maize flour and water, and is cooked to a very thickened consistency. You will need maize flour, water, saucepan/sufuria and wooden cooking spoon. In a pan, fry the onion in vegetable oil until it is soft. When the tomato has softened, add the managu.

Instructions to make Ugali, managu and beef:
  1. I start with sorting out the managu and cleaning them well. Put them in a sufuria with a little water and bring to a slight boil, about 10-15 min. Set aside
  2. Cut your beef into desired size and boil until tender. On a different pan, sauté your onions and add your tomatoes and garlic. Once well cooked, add your beef and stir. Add salt to taste and add just a little water to cook it. (Can add more if you need soup) NB. you can add a tbsp of corn flour to thicken the sauce if you like as well as any other ingredient.
  3. For the ugali, put ware in a sufuria and bring it to a boil. Put your flour in little by little as you stir. Make sure all flour is well Incorporated and the mixture is not too thick or too light. Let it cook on low heat for a while, until well done. Set aside.
  4. Remove your boiled managu from the water. (Step1)
  5. Sauté onions in a pan and add your tomatoes. Once cooked, add your managu,salt and stir well. Fry for 5minutes and add cream or a quarter cup of milk. (Omit if you do not like milk)
  6. Plate your food and enjoy it.

In a pan, fry the onion in vegetable oil until it is soft. When the tomato has softened, add the managu.
