  1. Get 2 medium to large sized tomatoes
  2. Get 2-3 dry red chilies
  3. Prepare 4-5 medium sized garlic

  7. Prepare Finely chopped vegetables (cabbage, carrot,  french beans, onions and capsicum)

  5. Then strain the water and allow the tomatoes and red chilies to cool.
  6. When the tomatoes become cool, then slice off the top eye part of the tomatoes. Roughly chopped or crush them and then add in a blender along with its juices, add red chilies, garlic and salt.
  7. Without adding water, grind or blend to a smooth paste.
  8. Remove the momos chutney in a bow and serve the chutney with veg momos.

  10. Take the maida, salt and oil in a bowl and mix it.
  11. Add water in parts and begin to knead to a firm dough.
  12. Cover the dough and keep aside for 30 mins.
  13. Heat oil in a pan. Add garlic, saute it for 2-3 sec.
  14. Add chopped onions, saute for 10-15 sec.
  15. Add all the finely chopped vegetables.
  16. Increase the flame and saute, fry the vegetables. Saute it for 4-5 mins then add salt to it.
  17. Continue to saute for 2-3 mins more. Switch off the flame. Mix well. Check the taste.
  18. The vegetables stuffing is ready.
  19. Now, shaping the veg momos, divide the dough in equal parts.
  20. Make ball of each slice.
  21. Take each dough ball and on a lightly dusted board, roll each dough ball into a thin circle of about 2-3 inch diameter.
  22. The edges have to be thin and center have to be thick.
  23. Place 1-2 tbps of vegetable stuffing in the center.
  24. Lift one side of the edge and start pleating.
  25. Join all the pleats in the center.
  26. Prepare all momos this way and keep them covered under a moist napkin, till you are ready to steam them.
  27. Steaming of veg momos, grease the steamer with oil.
  28. Arrange the momos in the pan, keeping space between them.
  29. Steam veg momos in a steamer pan. You can use idlli pans or pressure cooker to steam.
  30. Steam it for 5 to 6 mins, when you touch the momo then dough should not feel sticky to you.
  31. Veg momos are ready serve them with chutney.
