  10. Put a generous mound of apple filling on the 4 pieces without the slits, leaving about a 5 mm gap around the edges.
  11. Top with the pastry pieces with the slits, and crimp the edges with a fork.
  12. Line a baking pan with parchment paper, place the pies on top, brush the tops with egg yolk, and bake for 10 minutes in a 410°F/210°C oven.
  13. Lower the temperature to 360°F/180°C after 10 minutes, bake for a further 15 minutes and serve!!
