Instructions to make Koku's Quiche:
  1. In a bowl put the flour, pinch of salt, mixed herbs and cold cubed butter
  2. Use a pastry cutter (or fork) to cut the butter into the flour. Work fast so that the butter does not melt. Keep working it until it looks something like this
  3. Start adding the ice cold water 1 tablespoon at a time as you bring the flour mixture together with a metal spoon
  4. Keep adding water a little at a time until the pastry comes together to form a ball. Be careful not to put too much water
  5. Wrap the pastry in cling film and put it in the fridge for 1 hour
  6. After 1 hour remove it from the fridge and dust a work table with enough flour. Roll out the pastry to the desired size of your dish. I used a 9x13 glass dish. Use a fork to poke holes. Loosely cover the entire pastry and dish with foil and put it back in the fridge for another 1 hour
  7. 20 minutes before the 1 hour is up, preheat oven to 180 degrees. After 1 hour remove from fridge and cover the pastry with foil like this. Use another dish similar in size or slightly smaller and put it on top of the foil so that it acts as a weight. You are going to blind bake the pie crust. Put the covered pie crust and the 2 dishes into the oven and let it bake for 1 hour
  8. After 1 hour of blind baking, remove from the oven and let it cool before removing the dish that was acting as a weight and the foil. The pie crust will be nicely golden and cooked.
  9. In the meantime, chop the onions. Chop the hotdogs into small cubes. Grate the 2 cheeses and mix to combine them. Chop the dhania. Beat the eggs and milk and season with black pepper and salt
  10. Time to assemble. First put the cubed hotdogs in the pre baked pie shell (pie crust) and spread them evenly. Next spread the cubed onions, dhania and the cheese. Pour the egg mixture on top. Bake in the oven at 180 degrees for 30-45 minutes or until nice and golden. The centre of the quiche should not be wobbly when u press.
  11. Remove and let stand for 10 minutes before cutting and serving. We love eating it hot but it can also be enjoyed cold
  12. Note: Blind baking (sometimes called pre-baking) is the process of baking a pie crust or other pastry without the filling. Blind baking a pie crust is necessary when it will be filled with an unbaked filling (such as with pudding or cream pies), in which case the crust must be fully baked.
