  1. Take one American Sweet Corn and cut into roundels of about three to four centimetres. Then insert a toothpick from the middle of kernels and separate the corn from the stem with the help of a sharp knife from both sides of kernels. Make about thirty such sticks.
  2. Heat water in a pan,add salt to taste. When the water boils,put these sticks and boil for about four to five minutes. Strain and place them on a plate. Let it cool then sprinkle about two tablespoons of corn starch and one tablespoon of all purpose flour. Let it stand for sometime.. Heat oil in a pan, dust off the extra flour and deep fry.
  3. Make a mixture of dry spices and sprinkle on fries.
  4. Cheese Sauce: Heat one tablespoon of butter,add to it remaining one tablespoon of all purpose flour, roast for a minute, then add one cup of milk, salt and pepper. Mix well. Now add grated cheese. Stir till thick. Serve with corn fries.

Mix well and turn off the flame. Into the masala add the fried corn kernels, lemon juice and coriander leaves. Crispy fried corn tastes best when served hot. Use a metal spatula to move the fries around to a single layer. Dry bowl and place fries back in bowl.
